Make your own delicious work of art with a hands-on wagashi sweet-making workshop led by Kayo Yoshitaya!
Wagashi are traditional Japanese sweets that come in various styles and forms. In this workshop you will be learning how to make the Nerikiri type of Wagashi. Nerikiri is made with shiro-an (sweetened white bean paste) and gyūhi (a type of mochi) or glutinous rice flour. Like European marzipan, Nerikiri dough is pliable pasta that can be coloured and formed into many forms. Nerikiri sweets can often be bought in the shapes of Sakura (cherry blossom), Kōyō (autumn leaves), fruits and animals. They reflect the changing seasons of Japan and are to be served with tea at Japanese tea ceremonies.
Kayo Yoshitaya visits us from Kanazawa, Japan, one of the most famous places for Japanese sweets. In this workshop she will teach you the techniques to make these beautiful ‘confectioneries’ (sweets) by yourself. You will learn everything there is to know about the culture and history that surrounds the tradition of Wagashi. During this unique workshop (for 16 persons max.) you can make two types of Nerikiri with white beans, red beans, sugar and mochi. Matcha, roasted tea, pumpkin and beets will be used to give the sweets their colour.
